Overview
Soft tofu, also known as southern tofu, soft tofu. Generally refers to tofu with a high water content made with gypsum as a coagulant. It is characterized by a tender texture, elasticity, and a large water content. The general water content is 85%-90%, and the protein content is also high, above 5%. Boxed tofu and bagged tofu made with gluconolactone as coagulant also belong to the category of soft tofu.

Prepare all materials.
