Blanch the meat you bought and set aside

Place chopped green onions and ginger on the bottom of the pot

Put the meat skin down into the pot, pour in a large bowl of rice wine, soy sauce, sugar, pepper, and chicken essence. Bring to a boil over high heat, then simmer over low heat until the juice dries up, about 45 minutes. Turn the meat over about 30 minutes into the cooking process. Make the color of the meat better looking.
