Today I learned a new Chinese method of making a super soft milk bread. It is soft, stringy, sweet, fragrant, soft and delicious. The outer shell is slightly crispy and the inside is soft. Pair it with a cup of hot milk in the morning, and you have a simple and delicious breakfast.

Let's make medium-sized dough first. Put 200 grams of high-gluten flour, 15 grams of fine sugar, 3 grams of yeast, and 125 grams of milk into a food processor.

Stir evenly into a smooth dough.

Wrap the bread in plastic wrap and ferment at room temperature until 2-3 times in size, or refrigerate for 16 hours.

After the dough is fermented, mix 1 egg, 40 grams of fine sugar, 3 grams of salt, and 30 grams of milk together.

Then cut the dough into small pieces and add.

Finally add 80 grams of high-gluten flour, 20 grams of milk powder, and 1 gram of yeast.

Stir until a thick film forms.

Then add 45 grams of unsalted butter that has been completely softened at room temperature.

Continue stirring until a glove film forms.

Take out the dough, round it up, wrap it in plastic wrap and let it rest for 30 minutes.

Deflate the rested dough and divide it evenly into 8 portions.

Then roll into a ball, wrap in plastic wrap and let rest for 10 minutes.

Take a piece of dough and roll it into a shape of beef tongue.

Then turn it sideways and roll it out longer and thinner.

Roll up from both sides.

Shape all the dough and place it on the baking sheet separated to leave some space for fermentation and expansion.

Put it in the oven for secondary fermentation, with a temperature of 35°C and a humidity of about 70% (you can put a bowl of hot water to help fermentation)

Ferment until 1.5 times - 2 times in size. Take it out and sprinkle a layer of flour on it, then mark it with patterns.

Preheat the oven to 165°C and bake for 18-20 minutes.
