Peel and grate carrots.

Cut the prince mushroom into shreds.

Thaw the shrimp.

Beat the eggs into the omelette skin and cut into shreds.

Place the udon in a pot under cold water and boil until the water boils. Drain into cold water and set aside.

Heat the oil pan and fry the shrimp until cooked.

Heat the oil pan and fry the carrots.

Add the prince mushroom and fry.

Add a little salt and fry until the carrots and prince mushrooms are soft.

Add udon and stir-fry evenly.

Add oyster sauce, soy sauce, and sugar and stir-fry.

Add egg skin and shrimp.
-
Stir well. (You can add some chopped green onion or coriander, if you don’t have it at home, leave it out.)
