Peel the potatoes, wash and cut into cubes.

Wash the chicken thighs and lightly blanch them in hot water.

Heat the cold oil in the pan, add the peppers, fry the peppers briefly and then remove the peppers.

Lightly fry the chicken thighs in fried oil, add onions, ginger and garlic, stir-fry, add an appropriate amount of cooking wine, soy sauce and sugar, stir-fry, add an appropriate amount of hot water, add dark soy sauce and simmer briefly, then add potatoes and an appropriate amount of salt, cover and simmer until the soup is gone.
