Overview
Qianjiang shredded pork was created by my teacher, Mr. Hu Zhongying, the head of Hangbang cuisine. It is one of Mr. Hu’s specialty dishes. Based on Hangbang cuisine, it combines the strong taste of the northern style and the fine knife skills of the southern style. It draws on the strengths of many families and becomes a famous dish suitable for both the north and the south. This dish is bright red in color, fragrant, mellow in taste, sweet but not greasy, and has a rich sauce aroma. Let’s share the production process

The raw materials and accessories are: large tenderloin, green onions, ginger, sweet noodle sauce (it is best to use thick chives, but since the green onions in the market are very thin now, it is difficult to shred, so I choose green onions instead)

Drain the water from the shredded meat, then add Huadiao, salt and MSG to mix well to make it sticky, then add an appropriate amount of wet starch to mix well, and then add some salad oil (adding salad oil can prevent adhesion. The following is to add oil to the pan. If you don’t plan to add oil, don’t add oil here)

There is a formula here: put the base with white scallions, surround it with green scallions, drizzle with spicy oil, and cover with shredded ginger

Heat the oil in a pan until it is 40% hot, cut the shredded pork into pieces, and then take it out (if you don’t want to fry the oil, just do it with water or just water, that is, boil the water in the pot, then cut the shredded pork into pieces and cut them into pieces)

Heat the oil pan, add an appropriate amount of oil, put a green onion knot into the pan, and then take out the green onion knot

Add sweet noodle sauce and stir-fry until fragrant, then add Huadiao, soy sauce, salt, monosodium glutamate, sugar, and clear soup and simmer for a while, thicken a thin layer and add shredded pork, stir well and serve. After serving, pour an appropriate amount of spicy oil on top, cover with shredded ginger, and serve
