Cold noodles
Overview
The weather in Shanghai has been very hot recently. The weather forecast said it would rain, but the sun was still shining brightly. This is a fatal thing for fat girls without air conditioning! I feel lazy when it’s hot, and I want to keep things simple when eating, so let’s mix some cold noodles! Haha~~

The noodles are cooked in a pot, or dry noodles can be added. However, I still prefer the wet noodles pressed by the machine, which feels elastic.

Cut the cucumber into shreds, not too fine without a grater.

Cut off the shallots and cilantro and set aside the cilantro. Sauté the shallots and chili peppers together until fragrant. I forgot to take a photo of this step.

Add ice cubes and water to the cooked noodles to cool

After filtering the water, pour in the previously fried chili pepper, scallion oil and mix well. The reason why I put the onions in the oil is because I want the fragrance of the onions. I don’t like eating them raw because they taste bad in my mouth.

Mix the seasoning and pour it over the noodles. There is no need to add chili here, the spiciness is already in the noodles!
