  2. Mix milk + 40mL whipping cream, heat over low heat until slightly boiling (small bubbles appear on the edge of the pot)

  3. Mix egg yolks and sugar evenly, add strawberry fruit flavor powder and mix evenly

  4. Slowly pour the heated milk liquid into the egg yolk liquid, stirring constantly to combine

  5. Mix the liquid and return it to the pot until it is slightly boiling (small bubbles appear on the edge of the pot)

  7. Add the drained gelatine slices, stir until the gelatine slices are melted, and set aside to dry. This is the crème anglaise

  8. Whip 200g light cream until lines appear and are not flowing (do not whip until it is in a decorating state). Mix evenly with English buttercream to form the mousse liquid

  10. Refrigerate overnight to solidify before taking out and eating

  11. To make mirror pectin: add a packet of QQ sugar to an appropriate amount of boiling water, stir and melt. Let it dry, pour it onto the solidified mousse, and refrigerate until the pectin has solidified!
