Wash the king oyster mushrooms and tear them into thin strips, wash the coriander and cut it into sections, peel the carrots and cut them into shreds.

Add water to the pot and bring to a boil, add the king oyster mushrooms and blanch until soft, remove and set aside.

Chop the garlic into minced pieces, add the chilies, heat the oil and pour it into a bowl.

Add a little salt, chicken essence, sugar, light soy sauce, dark soy sauce, oyster sauce, and mature vinegar to the bowl and mix well.

Leave oil in the pot, add shredded carrots and stir-fry for a while.

Put the blanched king oyster mushrooms, coriander and fried shredded carrots into a bowl.
