Crack 5 small eggs into a bowl and add appropriate amount of salt.

Use chopsticks to break it up first.

Pour in appropriate amount of warm water and beat evenly.

Use a small spoon to skim off the foam.

Sieve and divide into bowls.

Bring water to a boil, bring to a boil over medium heat, turn to low heat and steam for 18 minutes.

One piece of sea cucumber ready to be cooked.

Cut into small slices.

Chives, millet pepper (don’t add if you don’t like spicy food)

Steamed eggs.

Put the sea cucumber on the egg custard. Cover and simmer for two minutes.

Season with appropriate amount of light soy sauce, mature vinegar and sesame oil. Sprinkle with chives and millet pepper.
