Miso soup
Overview
Miso is a paste made from soybeans, and the resulting soup is milky white and slightly yellow. People usually drink it with tofu, kelp, green onions, spinach and other vegetarian foods. If they want to drink more advancedly, they can add seafood. The taste is relatively rich and fresh. It seems like a lot of chicken essence was put in it. Miso soup is a paste made from fermented soybeans and other grains. The production process is as follows: put the fermentation materials in the grain, ferment overnight under controlled temperature, and after the mold grows, add water and salt, stir evenly, and seal for one to two years, and it is ready. Miso tastes sweet or salty, and its color ranges from red, black, or white.

Cut tofu into small pieces, two tablespoons of red miso, and a handful of dried kelp like tea leaves

Dilute the miso with warm water

After diluting, pour it into a small pot where milk is boiled, add kelp and cook for three minutes

Until the kelp softens and unfolds

Add tofu and a few drops of mirin (similar to cooking wine, slightly sweet, so it’s not a big deal if you don’t have it). Stir and continue to boil over low heat for two minutes.
