After defrosting, wash the chicken wings and drain them with kitchen paper.

Score the chicken wings twice with a knife, add salt, white wine, shredded ginger, light soy sauce, and white pepper. Rub each chicken wing with your hands and marinate for 1-2 hours.

Chop the onion finely, cut the ginger and celery into sections, tear the mushrooms into pieces, smash the garlic and set aside.

Preheat the enamel pot over low heat for two minutes, pour in a drop of olive oil, and place onions, celery, and garlic on the bottom. Arrange mushroom pieces again.

Finally, add the marinated chicken wings, cover and cook over medium heat for about 10 minutes.

After 10 minutes, uncover the lid, stir a few times and turn off the heat.
