Wash the fish, wipe the body clean, sprinkle salt on both sides and marinate for 20 minutes.

Light the fire and heat the pot, put more oil in the pot, the actual oil used is not much.

Stuff the mushrooms, green onion and ginger into the belly of the fish.

When the oil is 70% hot, put the fish in the pan. After one side is set, fry the other side. Then reduce the heat to 50% hot and fry the fish over low heat until cooked through.

When both sides of the fish are golden brown, drain the oil and place on a plate. Sprinkle chicken essence and white pepper on both sides.
