Braised King Oyster Mushroom

Ingredients: Pleurotus eryngii braised in soy sauce, rock sugar, salt, green onion and ginger

Clean the king oyster mushrooms and control the water.

Cut the king oyster mushrooms into evenly sized hob pieces, about 5cm in diameter.

Slice green onion and ginger.

Heat the pot and add appropriate amount of peanut oil. Place the king oyster mushrooms in the frying pan.

Fry until all sides turn golden brown and reduce in size.

Add onion, ginger and appropriate amount of rock sugar and stir-fry.

Add water to level with king oyster mushrooms.

Then add appropriate amount of braised soy sauce.

Bring to a boil, then turn to low heat and simmer for 15 minutes.

Add appropriate amount of salt to taste 5 minutes before serving, and reduce the juice over high heat.

Just sprinkle some chives when serving.
