Overview
Macaron is a French dessert made with egg whites, almond flour, and white sugar. It is usually filled with fruit jam or cream between two biscuits. Its origins can be traced back to the macaroons of the 19th century; after this sweet is baked, it is based on a round flat-bottomed shell, coated with mixed egg whites, and finally added with a hemispherical upper shell to form a round compact dessert with a rich taste. It is the most local delicacy of the Vienne province in western France. This kind of snack can occasionally be seen in northeastern France.

Mix and sift ingredients A, almond flour and powdered sugar

Add egg whites and coloring and mix well to form a fine almond paste

Put ingredient B in a small pot and cook over medium heat until it reaches 118 degrees, turn off the heat and form syrup

When boiling the syrup, beat ingredients C until the meringue is wet and dry, then add the cooked syrup in batches, beating while adding, until it becomes fine, bright and tough

Add the beaten meringue to the almond paste in three batches and mix well

Use a spatula to mix until smooth and ribbon-like

Put into a round mouth piping bag

Squeeze out the dough on the baking sheet and let it dry until a crust forms on the surface

Place in the middle rack of the oven, heat up and down to 140 degrees, and bake for about 12-15 minutes
