Ducks that are freshly killed in the morning are better, don’t buy frozen ones.

When the duck is crossing the water, put it down when it needs warm water. Don't wait until the water boils, otherwise it will get older.

Heat the oil over high heat, add all the seasonings and then add a bottle of beer. Remember not to add water. Turn to low heat and simmer. The duck will be cooked when the beer is dry
