Brine shrimp
Overview
This dish is made over high heat throughout to avoid the shrimps from hardening due to insufficient heat. It is a very simple quick dish.

Cut off the beards of the grass shrimp, remove the shrimp threads, soak them in water with cooking wine and salt for a while, wash them and set aside.

Add water to the stock and bring to a boil. Add rice wine, green onions and ginger slices. Add the shrimp and cook for one minute and turn off the heat. Turn off the heat and simmer for another minute

Drain the water and set aside. Remove the green onions and ginger slices

Add oil to the wok and heat it up. Stir-fried onions, celery stalks, pickled peppers, green peppers

Add cooked grass shrimp and salt to the pot. Stir quickly over high heat, stir well, and garnish with celery leaves.
