Overview

Qixing tripe is a famous dish in Fuzhou. The richness of mushrooms and the fragrance of chicken gizzards are mixed with eggs. The taste is also tender and elastic due to the combination of several ingredients, which makes people want to stop eating.

Steps

  1. Rub the pork belly with cornstarch or salt repeatedly 3-4 times, turn it over and rub it again, and finally rinse it with clean water;

  2. Clean the pork belly, first tie one end with a cotton rope, add mushrooms and duck gizzards from the other end, crack the eggs and pour them into the pork belly, gently shake the ingredients in the pork belly; fry the white peppercorns and set aside;

  3. Blanch the prepared pork belly in boiling water for 3 minutes;

  4. Put the blanched pork belly, stock and seasonings into the pot;

  5. Cover the pot and activate the [Making Soup]/[Big Bone Soup] function;

  6. After cooking is complete, cut the pork belly into wide slices and pour the soup over it.
