Garlic minced

Cooking wine, light soy sauce, balsamic vinegar, salt, chicken essence, sugar, starch, water to make juice

Remove the stems of the eggplant, clean it, cut it into cubes and pat it with starch

Add vegetable oil to a hot pan and heat until it is 60% hot. Add in the eggplant and fry it. The frying time should not be too long. Remove and control the oil and set aside

Heat oil in a pan, add minced garlic and saute over low heat until fragrant

Add eggplant and red pepper and stir-fry evenly

Change to high heat, pour the juice into the bowl, stir-fry evenly and serve
