  1. Prepare the seasonings, be sure to add less tangerine peel or the taste will be too strong

  2. Cut the pork belly into 3cm cubes

  3. Dry with boiling water to remove debris. The water should not be boiled too much, otherwise the meat will be cooked easily.

  4. Boil the oil and rock sugar until the color turns brown and set aside.

  5. Add seasonings and stir-fry with reserved sugar color. Stir-fry until golden brown and then put it in the casserole. Add water without covering the meat.

  6. Turn on the high heat first, and then the small one on medium heat, so that it can be cooked in an hour and a half.
