Grandma’s braised pork
Overview
I remember when I was a kid, every time I went back to my grandma's house during holidays, my grandma would cook this dish for me. In fact, every household has its own unique way of making braised pork. I just recorded my grandma's method. So as not to forget. It can be regarded as a kind of memory for my grandmother who loved me very much. The recipe is simple, but every bite is full of the flavor you remember from your childhood.

I used rock sugar, but put white sugar on top. In fact, sugar is fine too!

After the pot is hot, add the fattier meat and squeeze out a little oil. Then add the other meat. Stir fry for 2 or 3 minutes. (You can also put them together, I am used to squeezing out some oil first)

Add onions, ginger, aniseed, and stir-fry. You can add a little five-spice powder.

Add soy sauce and sugar. Stir fry evenly.

Add hot water and bring to a boil over high heat (taste the soup after boiling, and add soy sauce or rock sugar if necessary according to taste). Simmer over low heat until the juice is reduced and then add a little salt and you're done (about 1 hour and 15 minutes). Keep it simple.
