Cut the beef into thin slices, add a little light soy sauce, salt, peanut oil, egg white, and cornstarch, mix thoroughly, and marinate for at least half an hour.

Use more ginger, peel and slice it, and cut celery and carrots for later use.

Heat peanut oil in a pan, add ginger slices and sauté until fragrant.

Add beef slices and stir-fry quickly with chopsticks.

Add celery and carrots and stir-fry until cooked through.
