Spicy Chicken
Overview
Spicy chicken is a classic traditional dish from the Sichuan and Chongqing regions. It is named after Gele Mountain in Chongqing. This dish is bright brown in color and has a spicy flavor. Salty, mellow and slightly sweet. It is made with chicken as the main ingredient, plus onions, dried chilies, Sichuan peppercorns, salt, pepper, MSG and other ingredients. It is rich in nutrients and delicious.

Wash the chicken legs and chop them into small pieces, marinate them with cooking wine and salt for a while. It’s also great to use a whole chicken!

Prepare onions, ginger and garlic

Break open the dried chili peppers and get the seeds as well.

Heat oil in a pan, add chicken pieces and fry until golden brown.

Heat oil in another pot, add ginger and garlic and stir-fry until fragrant. Add dried chilies and peppercorns and stir-fry until fragrant.

The heat should be low, otherwise the chili will become burnt if the heat is too high. Add the fried chicken pieces, add soy sauce, pepper, sugar and chicken essence. Taste to see if it's salty, if it's salty add more salt. (Don’t add too much salt, it was already sprinkled when marinating)
