Chop the chicken into large pieces, put it into the electric pressure cooker, pour water to be level with the chicken, add ginger slices, cooking wine, and turn on the chicken button.

Soak the vermicelli in water, either hot or cold water.

After the chicken is pressed, pour the soup and meat into the pot, add soy sauce, salt, dark soy sauce, star anise, add vermicelli, cover and simmer over medium heat.

Stew the vermicelli until cooked, sprinkle some garlic on it, and turn off the heat if there is more soup left. Because the vermicelli absorbs the soup, if the soup is short for a while, the vermicelli will become lumpy.

There is no exact time for stewing. Depending on the properties of your vermicelli, some vermicelli will become rotten as soon as the pot is boiled, while others may need to be simmered for half an hour before they are cooked. So simmer for about ten minutes, taste the vermicelli and remove from the pan if it is cooked.
