Half a piece of tofu.

Chop the shallots, and add at least 1/3 of the tofu to the shallots.

Use gloves to mash the tofu.

Add salt, chicken essence and sesame oil according to your own taste.

Add chives.

Mix well with your hands.

Use two spoons to pour it back and forth into a football shape or use your hands to knead it into balls.

Arrange on the plate in sequence.

Sprinkle cooked black sesame seeds on top. Garnish with cilantro or bell pepper.
