Zero Failure Cake [Small Four Rolls]
Overview
A zero-fail cake roll that is simple to make but tastes unambiguous at all! The formula ingredients are as the name suggests. Each item contains 40 grams. It is simple and easy to remember. You don’t need to read the formula sheet repeatedly when making it. Because of its high water content, you don’t need to worry about cracking when rolling it up. The key is the taste. It has the pure cake aroma of crispy cake, but it is more delicate and smooth. With the sweet cream, it really melts in your mouth and you can’t stop!

Line a baking sheet with greased paper and set aside

Separate eggs (make sure the utensils are free of oil and water)

Add 10 grams of sugar to the egg yolks, pour in the corn oil and stir thoroughly until emulsified, add water and stir to combine

Sift in the flour

Whip the meringue: Drop lemon juice into the egg whites to make a rough foam, add fine sugar at one time and turn to high speed to create texture, then turn to low speed to sort out the bubbles inside, beat until small hooks (wet foaming) appear when you lift the whisk

Mix the meringue and egg yolk paste: add one-third of the meringue into the egg yolk paste and mix evenly

Take the remaining half and mix well

Finally, mix all the meringue evenly until fine and smooth

Pour the cake batter into the baking pan and smooth the surface

Put it on the table and tap it a few times to knock out the bubbles, then put it in the oven, middle layer/160 degrees/20~25 minutes (time and temperature are for reference only)

Add 20 grams of white sugar to the light cream and beat until clear lines appear. Refrigerate until set aside

Pour the baked cake into the baking rack to cool

Apply whipped cream

Roll up gently

Place in the refrigerator to chill for 30 minutes, then take out and cut into pieces
