Chop the carrots and spinach separately, put them into a food processor and blend into a paste, then squeeze out the juice. If you want the color to look good, it is best not to add water, which will cost more materials. It should be reminded that spinach needs to be blanched in boiling water in advance to remove the oxalic acid as long as it changes color. My carrots were watered down so the dough was not bright enough.

Slice the purple sweet potato, steam it in a pot, and grind it finely with a flour sieve.

Add salt to the water to make the flour stronger, slowly pour in the flour bit by bit, and stir into cotton wool. Same goes for all flours.

Knead into balls separately. And let it rise for more than half an hour.

Use a dough press to press into pieces separately, set to speed 4. If you don't have a dough press, you can roll it out by hand, and the thickness will be about 1mm.

Use a pasta machine to cut into thin noodles. You can also cut it by hand with a knife.
