Add scallions, ginger slices, a little dark soy sauce, cooking wine and a few peppercorns to the pot under cold water. Once the water boils, turn off the heat and soak for 20 minutes. Remove and cool slightly and tear off the chicken. Prepare scallions, parsley, and onions. Cut the bell peppers into diagonal slices.

Heat the pan with cold oil and sauté the minced onion, ginger and garlic, add the chili pepper and stir-fry until it changes color slightly, then add the onion shreds and stir-fry until it softens slightly.

Add chives and parsley, cooking wine, soy sauce, salt and sugar, then add chicken and stir-fry over high heat.

Pour in sesame oil before serving.
