Braised Pork Ribs with Potatoes

Boil water, blanch the ribs and drain, and cut the potatoes into hob pieces. Chop the dried chilies, slice the ginger, add Sichuan peppercorns and prepare condiments. Add a little more peanut oil and heat, add the above condiments and stir-fry until fragrant, add the ribs and stir-fry for a little longer, until the ribs turn yellow and fragrant, add soy sauce and stir-fry for a while

Add water and bring to a boil over high heat, then lower the heat and simmer for twenty minutes, add potato cubes, rock sugar, and star anise, continue for ten minutes

Stew until the potatoes are soft and translucent (be careful not to make them too rotten), add salt, white pepper, and a little sesame oil. Chop the coriander and add it, remove from the pot and serve on a plate.
