Original Roman Shield Cookies
Overview
It seems a bit far-fetched to call this regular shape a Roman shield? But it doesn’t matter, that’s the way it is done. . . Ingredients: Biscuits: 70g butter, 80g powdered sugar, 55g egg white, 135g low-gluten flour. Filling: 20g butter, 25g powdered sugar, 25g starch syrup, 35g almond slices

After the butter is softened at room temperature, add the powdered sugar

Mix by hand until there is no powder

Turn on the electric egg beater and beat the butter until it becomes lighter in color and thicker in volume

Add egg whites in portions

Beat evenly, making sure to wait until the egg white and butter are completely blended each time before adding the next one

Sift in low-gluten flour

Mix well

Put the batter into the cookie decorating gun and install the appropriate mold

Press the decorating gun and squeeze out the batter in the corresponding shape on the baking sheet, set aside

Put the butter and starch syrup needed to make the filling into the container

Heat over water until the butter melts and is fully integrated with the syrup

Remove from heat and add powdered sugar

Mix well

Add sliced almonds

Mix well and the filling will be ready

Use a spoon to fill the ring-shaped batter with the filling, being careful not to fill it too full

Place in the middle rack of the preheated oven at 170 degrees for about 15 minutes
