Stir-fried boiled eggs with black bean and chopped green onion
Overview
I have a lot of eggs given by my mother-in-law and friends, so I have to hurry up and eat them otherwise they will go bad, so I make eggs in different ways every day so that I don't get tired of them. In the past, eggs were beaten into liquid and fried. Today, the eggs are boiled first, then peeled and then fried, which gives a different texture and flavor.

Wash the eggs, put them in a pot and cook them, then rinse them with cold water.

Peel the shell off the hard-boiled eggs.

Cut each peeled egg into 4 small pieces.

Cut the green onions into finely chopped green onions and chop the ginger and set aside.
