Soak the glutinous rice in advance, and finally soak it the night before, for at least three hours.

Peel the lotus root and cut off both ends

Cut a lid off and fill the lotus root holes with soaked glutinous rice.

Cover the lid and secure with toothpicks

Use a rice cooker, add enough water, rock sugar, and red dates and cook for about an hour,

White sugar and water 1:1

Simmer over low heat until the sugar juice thickens and turns amber, turn off the heat and serve as caramel

Slice glutinous rice and lotus root, pour caramel on top, and eat
