Clean the yellow croaker you bought, slice the ginger, and chop the green onions for later use

Put an appropriate amount of cooking oil in the pot, add ginger slices, the oil temperature should not be too high, add an appropriate amount of salt, then add the fish, and fry on both sides. If the oil temperature is too high, the fish skin will easily stick to the pan. When frying the fish with salt first, the skin will not stick to the pan. Or you can marinate both sides of the fish with salt first. Just fry it lightly. Add cooking wine and cook on high for about a minute. Right, add a spoonful of light soy sauce, a spoonful of oyster sauce, half a spoonful of dark soy sauce, and a small spoonful of vinegar (vinegar is not easy to add, add some to remove the smell). Add the seasonings and cook for a minute or two. Turn the fish over and add an appropriate amount of water as shown. Roll up the green onions and put them in the pot. Cook over high heat until the water dries up. Be careful not to stick to the pot during this period. Just shake the pot a few times at intervals.
