Heat oil in a pan until red, add chopped onion, ginger, garlic and chili.

Saute for a while and add tomatoes.

Add some water and simmer. Personally, I like to boil the tomatoes until they are invisible.

Pour in the eggs and set.

Stir-fry, add the rapeseed, and continue to stir-fry.

Add some salt and take it out of the pot.
