Lotus root is slightly sweet and crisp. It can be eaten raw or cooked, or served cold. It is smoke-free and delicious!

Wash the lotus root, peel it and cut into thin slices. Cut the carrot into shreds, add water to the pot and bring to a boil, add lotus root and carrot and blanch the water. Drain and place in a clean bowl.

Add balsamic vinegar, sugar, salt and a small amount of water to make a sauce, pour it into a bowl and mix well. Place in the refrigerator for 20 minutes.

After taking it out of the refrigerator, add shredded red pepper and sesame oil, mix well and then serve.
