Prepare pork belly, preferably three layers

Pork belly cut into cubes

Boil water in a pot and blanch the pork belly. Skim off the scum and remove the pork belly to control the water

Add oil to the wok, add star anise, flower angle, and 1 tablespoon of sugar

Fry the sugar with the shovel clockwise until the sugar becomes foamy. When the sugar foam just subsides, add the pork belly

Flip back and forth to make the pork belly evenly browned, add green onions and ginger slices and stir-fry

Pour in boiling water just enough to cover the pork belly, add rock sugar (about 50g), an appropriate amount of thirteen incense and simmer over high heat for 10 minutes, then reduce the heat to low for about 40 minutes

Stir a few times in the middle. If the water is low, you can add more. When the soup is almost finished, add salt and chicken essence in about 40 minutes
