Hericium, lotus seeds and pork belly soup

Before the Spring Festival, I bought Hericium mushrooms from my sisters. They are really good ingredients. They are used to stew pork belly. They are definitely good for nourishing the stomach.

Prepare the pork belly and cut it into long strips for later use (because my mother-in-law handles the pork belly, I can’t take photos of the processing process! The inside of the pork belly is difficult to process, so using peanut oil can make it very clean!)

Soak Hericium erinaceus in warm water and set aside.

Put the pork belly, hericium, lotus seeds and ginger slices into the casserole.

Add appropriate amount of water.

Bring to a boil over medium-low heat for one and a half hours.

Crush peppercorns.

Add to soup.

Soak the wolfberries in water for 5 minutes and add them to the soup.

Add appropriate amount of salt and cooking wine, and start the pot!
