Overview

I can cook braised pork and popular dishes. But if rock sugar is used to fry the sugar color, the appearance, taste and texture of the braised pork will be very different from ordinary braised pork.

  1. Cut the pork belly into 2.5cm square chunks, put it in a pot of cold water, add ginger slices and cooking wine, and boil for about five minutes.

  2. While the meat is cooking, add a spoonful of water to the wok, add the rock sugar, and stir constantly to melt it. Continue to stir-fry until it turns into amber sugar color. When frying sugar color, you must stir-fry it slowly over low heat to get a standard sugar color. Then put the cooked meat pieces into the wok and stir-fry together until the meat pieces are evenly coated in color.

  3. Add peppercorns, aniseed, green onions, ginger slices and cinnamon, stir-fry for a while, then add "hot water" and pour into the casserole. After an hour and a half, add salt to reduce the juice.

  4. When the soup is thick, take it out of the pot.
