Mutton Ramen
Overview
Mutton is warm in nature and can not only protect against wind and cold, but also nourish the body. It has therapeutic and replenishing effects on common cold coughs, chronic tracheitis, asthma due to deficiency, impotence due to kidney deficiency, cold pain in the abdomen, cold sensitivity due to physical weakness, soreness and weakness in the waist and knees, sallow complexion and thin muscles, deficiency of both qi and blood, physical weakness after illness or postpartum, etc. It is most suitable for consumption in winter, so it is called a winter tonic and is very popular among people. Because mutton has an unpleasant mutton smell, it is ignored by some people. In fact, if one kilogram of mutton can be cooked with 10 grams of licorice, an appropriate amount of cooking wine, and ginger, it can remove the mutton smell while maintaining the mutton flavor.

Steps
-
Prepare 1 bowl of mutton in advance and soak it in cold water. Change the water three to four times in between and wash it thoroughly. The mutton cooked in this way will have almost no blood foam
-
After soaking the mutton overnight, it is very clean and you can start cooking
-
While the lamb was cooking, we started making ramen. Add salt to warm water and dissolve
-
Add flour. My ratio is 1 bowl of flour, 1 tablespoon of salt, and 1 bowl of water. There needs to be a little more salt and a little less water so that the dough will be chewy
-
Knead into dough. Remember the "three lights" principle of making noodles. The noodles should be light on the face, light on the basin, and light on the hands!
-
After waking up for half an hour, take a meal's amount and shape it into a smooth dough
-
Take the board and roll it into a finger-thick dough
-
Apply a layer of oil on both sides and cut into finger-width noodles
-
Take a clean container, apply a little oil on the bottom, cut the noodles into chopstick thickness, stack them neatly, and apply oil on each layer and strip. Let it sit for about 10 minutes.
-
After completing the above steps, you can cook the noodles. If you like it thicker, you can cook it directly. If you like it thinner, pull it out before putting it in the pot. It is easier to pull the noodles into thinner pieces after waking up
-
Slice the cooked mutton, pour out the mutton soup, add a little salt, MSG, mutton oil, chili oil, vinegar, add the cooked ramen noodles, sprinkle with mutton and coriander
