  1. Pizza dough: high-gluten flour, low-gluten flour, water, corn oil, fine sugar, dry yeast, salt, and milk powder. Knead into a dough. Knead vigorously until the dough becomes very strong. Stretch the dough and the dough can form a relatively thin film (expansion stage). That's it. Place the dough in an environment around 26 degrees, cover with plastic wrap, and ferment until it doubles in size (just leave it at room temperature in summer).

  15. Put in the oven, 190 degrees, 15 minutes

  16. After 10 minutes, take it out and sprinkle the last layer of cheese. Sprinkle more. I really like the stringy look!
