Egg yolk cake
Overview
Egg yolk shortbread is based on the Chinese tea peach cake, with boiled egg yolk added. It is a bit like the recipe of margarita, but not exactly the same, because the margarita recipe contains more starch. After adding egg yolk to this snack, it is more nutritious and tastes particularly good.

Melt the butter.

Add eggs and sugar. (Leave a little egg liquid for brushing the surface.)

Add baking powder and salt and stir evenly.

Sift in the flour.

Sieve the cooked egg yolks through a sieve and add them.

Stir up and down. Knead into a smooth dough and let it rise for about 20 minutes.

Divide the dough evenly into 11 pieces, ball them up and put them into the baking pan.

Press it gently to flatten it.

Brush the egg wash with a fine-bristle brush.

Sprinkle some black sesame seeds.

After preheating the oven to 180 degrees, place the middle and lower racks and bake for 10 minutes.

Then place the middle and upper layers and bake for 8 minutes.

Take out the baking sheet and let cool naturally. Plate and serve.
