Pine Nuts and Corn
Overview
I still have some pine nuts at home, and I originally wanted to make them into snacks, but I have been making a lot of snacks recently, so I made this simple and easy quick dish, pine nut corn.

Cook the waxy corn kernels, remove them and set aside

Reserve cooked green beans for later use, I used frozen ones and defrosted them in advance. Cut the carrots into dices about the same size as corn kernels

Fry the pine nuts in a pot over medium-low heat until cooked and set aside

Put a little oil in the pot, add carrots and corn and stir-fry for 1-2 minutes until fragrant

Add cooked green beans

Add salt, sugar and pepper and stir-fry evenly

Finally add pine nuts

Stir well and serve
