  1. Cut the pepper into small sections of about 2 cm, cut the ginger into shreds, and cut the onion into small sections;

  2. Cut the chicken legs (no need to remove bones) into small pieces with a sharp knife, add appropriate amount of salt, cooking wine, black pepper, and a small amount of sweet potato powder and marinate for 20-30 minutes;

  3. Heat 80% of the oil in the pan, add the marinated chicken legs, fry until the outside becomes dark yellow, then remove and drain the oil and set aside;

  4. .Take another pot, heat the oil to 70% heat, add ginger and garlic and stir-fry over low heat until fragrant, add dried chili peppers and Sichuan peppercorns, stir-fry until the smell starts to be pungent and the oil turns yellow;
