Peanut Butter Sandwich Cookies
Overview
The dim sum sold outside always tastes unsafe, so I decided to make it myself, at least I can feel more at ease when eating it. This sandwich biscuit made by Fatty is an energy snack between meals for his wife.

Beat the softened butter, icing sugar and eggs with a whisk until pale in color.

Add milk and mix well.

Sift in flour.

Knead into a smooth dough.

Knead into a cylinder shape.

Cover with plastic wrap and place in the refrigerator for 30 to 50 minutes.

Cut the frozen dough into 3 mm thick slices and place on a baking sheet lined with greaseproof paper.

Preheat the oven to 180 degrees.

Place in the middle layer of the baking pan and bake for 15 to 20 minutes.

Take out and let cool.

Take a cookie and spread a layer of peanut butter on it.

Cover with another biscuit and the sandwich biscuits are ready.
