Wash the shrimps, remove their whiskers, cut onions, lotus roots into pieces, and cut millet/hangjiao and celery into sections

Heat the pan with cold oil and fry the shrimp until it changes colour. Take out the reserved lotus root, celery and onion and fry them briefly. Remove the reserved oil from the pan and sauté the chili, pepper and garlic until fragrant. Put the shrimp and vegetables into the pot and stir-fry for a while

Add chili sauce, light soy sauce and appropriate amount of salt, pour in a small amount of water and cook over high heat for 5 minutes

Dry the water over low heat
