Prepare materials.

Peel and grate beetroot into shreds;

Peel the potatoes and cut into small cubes; cut the onion into small cubes; slice the garlic;

Add olive oil to the pot, add onions, potatoes and garlic slices and fry for a while;

Add beetroot and stir-fry evenly, add salt and pepper, squeeze in lemon juice to taste, then add 1 bowl of water and cook for about 10 minutes;

Turn off the heat and stir in the coriander; let it cool, then pour it into a blender and blend into juice.
