Pocket cake
Overview
Pocket cake, as the name suggests, is shaped like a pocket, so it is named ~ pocket cake. When eating, stuff it into your pocket according to your favorite vegetables or meat, and take a big bite. It is really enjoyable and delicious. I used boiling water to scald the noodles and make the dough. The fried pancakes were crispy and yet tough. Stuff in your favorite vegetables and eat together ~ it’s great

Add 220 grams of boiling water to the flour and mix with chopsticks.

Knead it into a smooth dough with your hands, cover it tightly and let it rest for 20 minutes.

Prepare potatoes, eggs, and peppers.

Peel potatoes and peppers, wash and cut into thin strips.

Add an appropriate amount of oil to the pan and stir-fry the potatoes and pepper.

Add appropriate amount of salt and your favorite seasonings and stir-fry until the heat is gone.

Place fried potatoes and peppers on a plate and set aside.

Then beat two eggs with appropriate amount of salt, spread them into egg cakes in a pan, and cut them into shreds.

Take out the risen dough, sprinkle some dry flour and roll it into thin sheets. The thinner, the better.

Use a knife to cut the dough into pieces about 15 cm wide and 30 cm long.

Apply a layer of oil in the middle of each dough piece, but don't oil both sides.

Spread a little water on both sides of the dough, fold it into alignment, and pinch both sides with your hands to make a pocket shape.

Grease both sides of each pocket blank.

Dry fry both sides until golden brown.

Fill the cooked pocket pancakes with your favorite vegetables, green onions, coriander or meat.
