Add the minced onion, ginger, garlic, oyster sauce, salt, and light soy sauce to the meat filling and mix well, then add an egg white and mix well.

Cut the tofu into continuous pieces. Cut the bottom without cutting the first cut, and then cut the second cut. The thickness of each cut is about half a centimeter.

Put an appropriate amount of meat filling into the cut tofu clips.

Prepare egg custard. Beat 1 whole egg and the unused egg yolk into a bowl, add flour, 2 tablespoons of starch and an appropriate amount of water, scoop it up with a spoon until it flows down slowly.

Put an appropriate amount of oil in the pot. When the oil is 60% hot, coat the tofu clips in batter, put them in the pot, fry over medium-low heat until golden brown, remove and drain the oil. Then explode again.

Leave a little oil in the pot, add minced ginger, minced garlic and minced pickled pepper and stir-fry until fragrant.

Add tomato paste and stir-fry for 5 seconds.

Add about half a bowl of water and 1 tablespoon of sugar, add light soy sauce and balsamic vinegar and stir-fry evenly. Add water starch to reduce juice.
