All ingredients. Bacon can also be replaced with pork belly, ham, bacon, etc. I used soft tofu, but you can use old tofu if you like. You can use mushrooms instead of shiitake mushrooms. Well, it all depends on your preference.

Shred the appropriate amount of ginger, cut the white part of the green onion into sections, cut the green part into chopped green onion, cut two pieces of bacon into small pieces, slice five mushrooms into small pieces, and cut the tofu into small pieces.

Heat the oil in a hot pan and sauté the shredded ginger and scallions until fragrant. Add the bacon and stir-fry for a while. In the afternoon, stir-fry the mushrooms until fragrant. Pour the cooking wine along the edge of the pot and stir-fry evenly, then add water to cover the ingredients. Cover and bring to a boil.

Add tofu, add salt, stir well, cover and bring to a boil over high heat, then reduce to low heat and simmer. It will take about a quarter of an hour until the umami flavor of the bacon and mushrooms is released and the tofu is infused. Turn off the heat, add a little MSG and pepper, and mix thoroughly.
