Mango Cherry Blueberry Yoghurt Cake (No Bake)
Overview
This refrigerated cake does not need to be baked. It is really delicious. Although it is complicated to operate, it is clean and hygienic. You can make it yourself for family and friends’ birthdays. This model is 6 inches. The fruit in the cake depends on your personal taste (I usually use ready-made materials). You can replace it with durian, strawberry and other fruits. The method is the same. First prepare 80g of Oreo biscuit powder and put it into the grinding cup of a food processor and grind it into powder. Heat the butter over water to melt it into a liquid state. Pour it into the digestive biscuit crumbs and mix well with a spoon.

Spread the mixed Oreo cookie batter evenly on the bottom of a 6-inch round mold, flatten it with the back of a spoon, and chill in the refrigerator until it is set.

Soak 20g of Geely slices in 90g of ice water until soft, then heat over water until melted.

Pour the yogurt into a bowl, add 20g of powdered sugar and an appropriate amount of blueberry jam, then pour 2/3 of the liquid Geely juice and stir together evenly.

Blueberry yogurt paste is ready

Pour the light cream into a bowl, add 20 powdered sugar, and use a whisk to whip until the texture can be maintained (when whipping the cream, I put the container in ice water to make it easier to whip)

Mix the whipped cream and blueberry yogurt paste, and stir evenly from the bottom up.

Dice the mango and place a layer in the Oreo cookie base mold.

Pour the previously mixed mixture into the Oreo biscuit-based mold, smooth the surface of the batter and place it in the refrigerator.

Next, make the mirror surface (if you find it troublesome, you don’t need to make the mirror surface). Take the remaining 1/3 of the liquid Geely juice, add an appropriate amount of blueberry sauce, mix, stir and let cool.

Pour onto the cake that has been refrigerated for about 2 hours, and then refrigerate to achieve a mirror-like effect.

It can be demoulded in more than 4 hours (the final product looks uneven because I demoulded too early, so it is recommended to refrigerate it for more than 4 hours to demould)

Use a piping bag to fill the buttercream, decorate with a flower, and place some cherries on it.
